Dough: it is prepared in May. Heat 100 ml of milk, add 1 lgt of sugar and 2 lg of flour, then the fresh yeast. Mix well and leave to rise.

The rest of the milk is heated together with the sugar until it melts. Add the vanilla sugar and grated lemon peel.

Put sifted flour and salt in the mixer bowl. Pour the raised mayonnaise, the beaten yolks and start the mixer at low speed. Pour a little of the warm milk while mixing the dough. Increase the speed and pour the oil little by little until it becomes a soft dough. Mix for 10 minutes until it becomes a soft, non-sticky and fine dough. Turn off the mixer and let the dough rise until it doubles in volume.

Filling: cut the shit into small cubes and be as colorful as possible.

The ground walnuts together with the sugar, vanilla sugar and milk are put on low heat and left for 5 minutes. Remove from the heat and add the rum essence and raisins. Leave to cool. The 2 egg whites beat well with a pinch of salt and vanilla sugar. Incorporate in well-chilled walnut cream.

Divide the dough into four equal parts, two for nutella and two for walnuts.

Grease the table with a little oil. Spread a rectangular piece of dough with your hands. Grease with nutella and place the shit in place. Do the same with the second part and then twist between them, the two rolls formed. Place in a tray lined with baking paper.

Do the same with the rest of the dough, only grease it with walnuts and raisins. Put it in the pan and leave it to rise for another half an hour, in a warm place.

Beat the egg with the milk and grease the cozonacs with this mixture. Put the trays in the preheated oven at 180 degrees for about 35-40 minutes or until it is done and nicely browned on top.
