  • 12 cupcakes
  • 250g buttercream icing
  • red coloured sugar
  • 75g mini white chocolate buttons or chips
  • 12 red coated chocolates (e.g. Smarties® or M&Ms®)
  • 24 candy eyes or mini chocolate chips
  • 60g desiccated coconut

  1. Spread the buttercream icing over the top of cooled cupcakes or muffins.
  2. Pour the red sugar into a shallow dish, then dip the lower third of each cupcake into the sugar. Create a white border for the hat by placing about six white chocolate buttons or chips at the edge of the red sugar section.
  3. Add two candy eyes or mini chocolate chips as eyes then create the nose by placing a red sweet at the centre. Sprinkle the bottom of the face with some coconut for a beard. Finally, place one single white button or chip at the top of the hat as a pompom.

Step 1

Prepare and bake cake according to package directions for cupcakes. Cool for 10 minutes remove from pans to wire racks to cool completely.

Place 2/3 cup frosting in a small bowl tint with red food coloring. Set aside 3 tablespoons white frosting for decorating. Cover two-thirds of the top of each cupcake with remaining white frosting. Frost the rest of cupcake top with red frosting for hat. Place reserved white frosting in a small heavy-duty resealable plastic bag cut a 1/4-inch hole in one corner.

On each cupcake, pipe a line of frosting to create fur band of hat. Press a marshmallow on one side of hat for pom-pom. Under hat, place two chocolate chips for eyes and one red-hot for nose. Gently press coconut onto face for beard.

Recently, through my friend&rsquos introduction, I am connected with a talented fondant cake maker Teeny Tiny 小小の who specializes in fondant cakes and custom-order cakes.
