- Preheat oven to 180 C / Gas 4.
- TO MAKE FILLING: In a large bowl beat the cream cheese until smooth. Add the Feta cheese, dill and garlic granules. Beat until smooth and creamy.
- Put 1/4 of the filling on each breast, then roll and tie the breasts with cooking string to seal. Brush each breast with melted butter and sprinkle with salt and pepper to taste. Bake uncovered in the preheated oven for 20 minutes or until the juices run clear.

Feta-Stuffed Chicken Breasts
These aren’t your ordinary chicken breasts! Chicken gets stuffed with feta, sun-dried tomatoes and basil in this easy dinner idea.
- 1 tablespoon snipped dried tomatoes (not oil-packed)
- boiling water
- 4 skinless, boneless chicken breast halves (about 1 1/4 pounds)
- 1/4 cup crumbled feta cheese
- 2 tablespoons softened cream cheese
- 1/2 teaspoon dried basil, crushed
- 1/2 teaspoon ground black pepper
- 1 teaspoon olive oil
- Preheat oven to 350F.
- Place tomatoes in a small bowl. Cover with boiling water. Let stand for 10 minutes. Drain and pat dry set aside. Meanwhile, using a sharp knife, cut a pocket in each chicken breast by cutting horizontally through the thickest portion to, but not through, the opposite side set aside.
- In a small bowl, combine feta, cream cheese, basil, and tomatoes. Spoon about 1 rounded tablespoon into each chicken pocket. If necessary, secure openings with wooden toothpicks. Sprinkle chicken with salt and pepper.
- In a large oven-proof skillet, heat oil over medium-high heat. Add chicken, cook until browned, flip over, and cook on second side until browned. Move skillet to the preheated oven and bake until chicken is no longer pink and registers 170F on an instant read thermometer, about 25 minutes.

- Look for organic chicken, which typically has smaller breasts.
- Be careful not to cut your chicken breast all the way through.
- Chop your ingredients small so they can all fit inside the chicken.
- If you don’t have an oven-safe or cast iron skillet, sear the chicken in a skillet first, and then transfer to an oven-safe dish.
- Refrigerate leftovers for up to four days.
- To freeze the leftovers, transfer to a freezer-safe container and freeze for up to three months.
Ingredients in Spinach and Feta Stuffed Chicken
Chicken. I like to use organic chicken breasts for two reasons. First, for the obvious reasons of no added hormones, antibiotics, etc.
Second, organic chicken breasts tend to be much smaller, manageable portions.
Spinach. A whole six-ounce bag of spinach is what you’ll need. It looks like it lot, but once you cook it, it will shrink down to basically nothing.
Feta. I love the salty bite of feta with spinach, the combination reminds me of my favorite Greek appetizer spanakopita.
Egg. One egg yolk actually. This helps to bind the filling together and adds a little bit of heft and richness to the spinach and feta filling.
Flavor. Again, I wanted to mimic the flavors of spanakopita so I included lots of ground nutmeg, a little bit of onion and garlic, and of course, plenty of salt and pepper.
Butter and olive oil. I like to cook chicken in a combination of butter and olive oil. The butter is for flavor and to get that dark brown crust on the chicken.
Olive oil has a higher smoke point than butter which tends to burn a little bit easier, so the combination of the two is both flavorful and allows you to cook the chicken at a high temperature.
White wine. Use a good dry white wine. I like a pinot gris or sauvignon blanc. It doesn’t have to be expensive, just something you’d enjoy drinking. And don’t worry, the liquor cooks out. You are not going to get your kids tipsy.
Lemon juice. To stick with the loose “Greek” theme we have going on, I threw in a splash of lemon juice to the white wine. It’s acidic which pairs perfectly with the spinach. I also like to squeeze a little bit on the chicken right before serving.
Creamy Spinach and Bacon Stuffed Chicken Recipe
Looking for some variations to your usual chicken dishes? Why not try this delicious stuffed chicken recipe for a bit of a change.
4 strips of bacon, optional
1 1/2 cups chopped fresh spinach
- Rinse and pat dry the chicken breasts. Using a sharp knife, cut the breasts in the middle but not all the way through. You should have a pocket to add the filling into.
- In a small bowl mix the paprika, 1/2 teaspoon salt, garlic powder, and onion powder. Sprinkle evenly over both sides of the chicken.
- Spoon the spinach mixture into each chicken breast evenly.
- Heat a frying pan with 1 tablespoon olive oil. Place the breasts in the hot pan and cook for 4 minutes or until the chicken turns golden brown. Turn the breasts over and cook for another 4 minutes.
- Reduce the heat to low and cover the pan with a lid and cook for another 5 minutes or until the chicken is cooked through.

Keto Spinach & Feta Stuffed Chicken Breast
One of my favourite all time meals have always been stuffed chicken breasts. No matter what way you stuff them, they're always guaranteed to be amazing. My favourite recipe in my gluten eating days were Spinach and Feta Stuffed Chicken Breast made with a cream gravy thickened with flour or corn starch. Obviously, I don't make anything with flour or corn starch anymore so I decided to ketofy this recipe because it's one of my ultimate favourite! The creamy gravy goes extremely well with the melted feta cheese and spinach!
One similar recipe I have already on the blog are my stuffed chicken breasts with basil, goat cheese and sun-dried tomatoes . This keto spanakopita stuffed chicken recipe is also similar as it's stuffed with feta cheese and spinach. I bet that if I were to put the cream gravy sauce with those breasts, it would be unbelievable! I love the creaminess of goat cheese so paired with this cream gravy and the sun-dried tomatoes, it would even be better! In this recipe, I used three chicken breasts but I made it 4 servings. One chicken breast is extremely filling and I could barely finish one myself so four servings seemed more appropriate.
This cream gravy is amazing drizzled on any vegetables, pieces of meat or even low carb bread! It would be heavenly if poured over my Creamy Keto Mashed Cauliflower ! For the gravy, you will need to use some xanthan gum to thicken it, but you could also use arrowroot or tapioca starch, guar gum or even cream cheese if you wanted. Just don't add too much or you'll end up with a gooey jelly mess! The first time I used xanthan gum, I didn't know you only needed a little bit like a quarter teaspoon or a bit more, but ended up putting like 2 tablespoons and it was the most horrible sauce ever!! So definitely be careful! If you notice the gravy hasn't thickened with the half teaspoon, just add ¼ more teaspoon at a time. A little goes a long way!
