Potatoes with rosemary and green onions

When I did it braided muscle which I put on the blog yesterday, I also made some potatoes in a way I haven't done before. I preferred to keep them for today, not to mix the information and lose them, especially because they can be a meal in itself (yes, there are vegetarians, there are also fasting days, there are also days when the meat is too expensive). There it is:

First I boiled the potatoes in water with a little salt. Then I cut them into quarters (the dimensions matter too little, they are already cooked, the idea is to still cut them, to brown faster and get a taste of the rosemary and green onions that I put in the pan once with potatoes). I sprinkled them with very little oil, I threw two crushed garlic cloves in the pan and with the peel, I put the pan on the grill (you can use a hob, stove or oven, which I highly recommend). I put the lid on the grill and kept the potatoes at 200 degrees Celsius for ten minutes. I mixed in them twice during this time.

There is nothing simpler. If you want, sprinkle a little salt on them, a little pepper. You can accompany them with lettuce or tomatoes. Maybe with a little cheese.

You both did very well. I especially like potatoes prepared this way, at fairs and festivals they are my effective dish. Rost kartoffel is called in German and is usually prepared with lard. The taste is new and full of personality.

We really like potatoes and we have already gathered many recipes with potatoes on the blog. I cooked potatoes in various combinations, I made potato salad, potato stew with mushrooms, potato soup and much more. But our favorites remain baked potatoes, which, most of the time, we serve with a steak. However, baked potatoes are very filling and can be served as such, possibly with a salad. Baked potatoes seem to me the simplest and best way to cook potatoes.

This time I made my own some baked potatoes with rosemary and garlic, very tasty and flavorful. I also added some paprika and pepper because the potatoes must be spicy for me :). If you don't want them to be spicy, you can use paprika or leave them alone with salt, rosemary and garlic.
I used dried rosemary to prepare this recipe for baked potatoes. Dried rosemary has a very strong aroma and it is not recommended to use more than one teaspoon. If you have fresh rosemary, you can use a little more.
We served the baked potatoes with rosemary and garlic with a chicken on the bottle. But you can serve them with any other steak. They are very tasty!

Ingredients needed to prepare the recipe for baked potatoes with rosemary and garlic (for a 25 / 35cm tray):

- 1.8kg potatoes
- 3-4 tablespoons of oil
- 4-5 cloves of garlic
- 1 teaspoon of dried rosemary
- 1 teaspoon of salt (or to taste)
- 1/3 teaspoon ground pepper
- 1/3 teaspoon paprika

I covered the tray with aluminum foil and put it in the preheated oven (180º C for the electric oven) for 10-15 minutes.

I love spring for peeling and warm wind in my hair and for the first ice cream enjoyed outside, outdoors. Among all, there is another reason why I am happy as a child: a portion of new potatoes, small and round, browned with salt in the pan, along with a spring salad.

Ingredient:

  • 300g new small potatoes
  • A teaspoon of coconut butter (or other cooking oil)
  • a pinch of freshly ground salt and multicolored pepper
  • a powder of dried and finely ground rosemary
  • a dried and ground onion, garlic and ginger powder
  • a powder of turmeric powder
  • For the salad: tomatoes, cucumbers, radishes, green onions, lettuce leaves, a few drops of oil and vinegar, salt.

Method of preparation

I wash the new potatoes under running water, rubbing them with the rough part of the dish sponge. I use the ceramic pan (a new purchase of which I am very satisfied), I let the coconut butter heat up a bit and I add the drained potatoes. I put the lid on and let it simmer, simmering, stirring 1-2 times.

Baked chicken or cauldron is a simple traditional steak, very tasty and full of flavors - which is hard to resist. In the traditional recipe, the chicken was seasoned with a mixture of spices based on thyme or parsley. In this version we suggest marinating the chicken in a mixture of rosemary with garlic, paprika, pepper and oil. Rosemary used in moderate and balanced amounts, complements the steak with a bouquet of very fine flavors. But when used in excess, the aroma of rosemary becomes dominant and can give a slight bitter taste to food.

Ingredient:
a whole chicken of about 1.2 kg,
1 teaspoon rosemary,
3-4 cloves of garlic,
1/2 teaspoon pepper,
1/2 teaspoon paprika,
1 teaspoon salt,
100 ml oil,

1/2 kg new potatoes,
salt and pepper,
a few sprigs of parsley

Optionally, a tablespoon of brown sugar dissolved in a few tablespoons of water can be used to glaze the chicken, or a spoonful of maple syrup mixed with two tablespoons of water can be used.

Preparation:

Preparing the chicken in the oven is extremely simple. The chicken is cleaned of any remaining stalks, washed well with cold water, then drained of excess water with a paper towel.

In a small bowl put together: paprika, pepper, a teaspoon of salt, rosemary, crushed garlic and oil. Mix all the ingredients well, and with a brush grease the chicken both inside and out. The chicken is left to marinate for at least half an hour, preferably a few hours. During this time the meat is tender and flavored. From time to time, the chicken is greased again to refresh the oil, which otherwise drains easily from the chicken.

The oven is heated to 180C.

The marinated chicken is placed in the middle of a heat-resistant tray. Add all the new potatoes cut into larger pieces or leave whole if small.

Sprinkle the potatoes with the oil left over from greasing the meat. Add salt and pepper to taste. Add half a cup of water to the pan and boil the potatoes at the beginning. At the same time, the vapors emanating from the water in the tray keep the meat tender, preventing it from drying out.

Place the tray in the oven for approx. an hour, until the meat is browned. From time to time, grease the chicken with the sauce in the pan or with the mixture of sugar or maple syrup.

When the chicken is well penetrated, take it out of the oven and serve it with potatoes while it is hot. Chopped green parsley can be sprinkled over the potatoes. Pickles or a light salad can be served with it.
