The pasqualina cake is a typical Easter recipe from Liguria. This is my recipe for making it with the thermomix.
How to make the Pasqualina cake with the thermomix
To prepare the brisée: here the recipe
Put 500 ml of water in the jug, place the Varoma with the spinach and cook at Varoma temperature for 5 min., Speed. 1.
Empty the jug, put the spinach in it and chop for 30 sec., Speed 6.
Add the ricotta, pecorino, an egg, salt and pepper and mix for 1 min. and 30 sec., vel 2.
Line a non-stick springform pan with a disc of dough.
Prick the base, then pour the filling over it.
Form some conchettes with the back of a spoon and gently place the 3 remaining shelled eggs inside.
Close with the second disc of pastry and seal the edges well.
Prick the surface and brush with a little milk.
Bake in a preheated convection oven at 190 ° C and cook for about 45 minutes.
Let it cool down before unmolding and serving the Easter cake.
