Cherry jam is one of my favorite preserves. With this recipe you can prepare it with the Thermomix.

Method

How to make cherry jam with the Thermomix

Wash the cherries, dry them and remove the stalk and stone.
Put sugar, cinnamon and lemon peel in the jug and chop for 10 sec., Speed. 7.
Put the cherries in a bowl, add the flavored sugar and lemon juice, mix gently and leave to rest for a couple of hours.

Put everything in the jug and cook for 30 min. at 100 °, vel. 1.
Check the consistency by doing the saucer test, and eventually cook for 5-10 min. at temp. Varoma, vel. 1 or, if you prefer a smoother jam, vel. 3.

Pour the boiling jam into the already sterilized jars, close tightly with the lids, turn over and let cool in this position.
Once cold, you can store them directly in the pantry, or pasteurize them earlier, for a longer duration.
