Pretzel or Pretzel recipe of 25-01-2010 [Updated on 27-08-2018]
Pretzels, also called pretzels, pretzl or brezn, are a typical German bread, braided, amber in color covered with coarse salt. The peculiarity of their color is given by a pre-cooking in water and bicarbonate before being baked.Many claim the paternity of the pretzels, but all seem to agree on the fact that it is a bread of very ancient origin and that it was probably born in some monastery of central Europe where it is said that the monks with the leftover dough made strips and knotted them in a shape that resembled the crossed arms during a prayer.
I have actually always called this rolled bread Alsacians which apparently is the industrial version of German Bretzel. I looked around for a recipe to make them at home but it was very difficult to figure out which one to rely on, so I made a mix of various recipes and this is the result :)
I must say that as soon as they were baked, the pretzels were very good, the next day, they remained a bit chewy, so if you have any suggestions for me, as usual, it's welcome: P
How to Make Pretzel or Pretzel
Procedure for preparing pretzels
Arrange the flour with the sugar and salt in a fountain. In the center arrange the lukewarm water in which we have melted the brewer's yeast.
Start mixing the dough, then add the warmed melted butter.
Knead the pretzel dough on a pastry board for about 10 minutes until it is smooth and elastic.
Let the dough rest covered with a damp cloth in a warm place for about 2 hours.
After rising, take it back and divide it into 8 loaves.
With each block, form a cord about 50 cm long, thinned towards the ends.
Roll up the dough string giving it the typical pretzel shape.
Place the pretzels on a baking sheet covered with parchment paper and let them rise for half an hour.
Preheat the oven to 220 ° C.
Bring the water and baking soda to a boil, dip the pretzels in 2 at a time and cook for 40 seconds.
Then drain them with a slotted spoon and put them on a tea towel.
Then transfer them to a baking sheet covered with parchment paper and sprinkle them with coarse salt.
Bake the pretzels at 220 ° C for about 20 minutes. Then serve them hot from the oven :)
