The potato and surimi croquettes are a delicious appetizer to bring to the table. I was looking for a new recipe to make some fish balls and I came across a photo of a kind of potato crocchè with the heart of surimi. In no time at all I got to work and this is the result.
I opted for one baking in the oven, more convenient and healthier, but if you prefer you can fry the potato croquettes in a pan with oil.
Served alone or accompanied by various types of sauces, I accompanied them with a fresh yogurt cream, these croquettes will please you, guaranteed: P
How to make potato and surimi croquettes
Boil the potatoes for 30 minutes in a pot with plenty of water.
After peeling them, purée them with a potato masher and let them cool.
When they are cold add salt, pepper, chopped parsley, pecorino cheese and the egg.
Mix with the help of a spoon and add half the surimi, coarsely chopping it.
Now take a spoonful of puree and lightly mash it in your hands.
Place half a stick of surimi in the center and close to form a croquette.
Put each croquette prepared first in the egg white and then in the breadcrumbs.
Transfer all the breaded croquettes to a dripping pan covered with parchment paper.
Drizzle with a drizzle of oil and cook at 180 ° C for 20 minutes.
