The Mellow Mushroom pizza chain has debuted a limited-run menu created by its own employees

Mellow Mushroom, a national pizzeria chain with over 160 locations, is offering a limited-run menu designed by Mellow Mushroom staff. Originally founded in 1974 by three college students, most of Mellow Mushroom’s locations are within college towns in the southeastern US and along the West Coast. More recently, Mellow Mushroom has expanded to more metropolitan areas.

Over 85 recipes were submitted by the restaurant’s servers, bartenders, and cooks; then judged on taste, presentation, and originality.

The Homegrown Picks menu is available to curious customers from now until March 31. Menu items include the Quirky Turkey Club Pie, the Chicken Cordon Bleu Calzone, the Thaidal Wave Sweet Thai Chili Chicken Hoagie, and the Slow Ridin’ Chicken Salad. Newly designed cocktails include the Blueberry Vodka Mojito, the Pom Pom, and the Cucumber Melon Cooler.

All seven final items to make it to the menu were judged by a panel of industry professionals: four-time James Beard award-winning food writer Kim Severson, Eater Atlanta editor Sonia Chopra, chef Rory Moon, mixologist Todd Richman, and Home-Grown Industries CEO Richard Brasch.

Streamlined Menus andRecipes Are the New Norm

Restaurants need to address legacy costs and eliminate items that don’t boost sales and profits.

Operators have been streamlining their menus to focus on items best suited for takeout and delivery, while at the same time seeking to minimize their costs for inventory and production.

Simplified menus that utilize versatile ingredients had been gaining traction even before the COVID-19 crisis. But they have become even more important now that driving down costs is critical to survival. Operating with simplified menus also allows restaurants to work with a reduced staff, as many operators have had to adjust their labor models either because of reduced revenues or to maintain social distancing in their facilities.

“The first step to rationalizing and optimizing a menu is to take a look at share of sales and share of profits,” says Maeve Webster, president of consulting firm Menu Matters. “Any items low on both should immediately be axed. Items not driving sales and contributing little to profitability are taking time and focus away from the items that do.”

Operators should also evaluate their ingredients and products according to how well they maintain their integrity in the delivery process, she says.

If there are good ingredient substitutions that won’t alter the fundamental characteristics of an item but will travel much better—and are easy to source and don’t significantly negatively impact the profitability—then that should be “an easy first step,” Webster says.

“Overall, a streamlined menu will work much better operationally for takeout/delivery because it ensures everything going out the door is excellent quality and working to increase patron loyalty, visitation and spend,” she says.

At Mellow Mushroom, the Atlanta-based pizza and sandwich chain, the company had already been conducting an analysis of which menu items were best suited for its online ordering platform, as that has been a growth focus for the chain.

“We had already identified some of the categories of products and some individual menu items that either were not being ordered online very extensively, or just didn’t travel well,” says Anne Mejia, vice president of brand development at Mellow Mushroom. “So six weeks ago, we went through the list and said, ‘These items weren’t working anyway, so let’s just make those decisions quickly.’”

The company carefully examined slower-moving items and dishes that require extra labor, and gave its franchises the option to remove those items from the menu through mid-May. It also looked at some unique produce items that were used minimally, such as in a single type of salad, and revamped the recipes of those salads to eliminate those items.

“We said we are going to make our salads a different way during this period of time, just so operators don’t have to bring in individual SKUs of items,” says Mejia. “We don’t want them spending money on food that they can’t sell.”

Bootleg Bacon Fest at Mellow Mushroom for a Limited Time

Bacon takes center stage in Mellow Mushroom’s latest limited time offer: Bootleg Bacon Fest. As bacon emerged as a preferred protein on menus across the country, Mellow Mushroom created a pork-inspired menu featuring the product in a truly original way.

Menu items include Wake ‘N’ Bacon, a pizza topped with sunny-side-up eggs, Applewood smoked bacon and mushrooms, and Bubba’s Bacon Bonanza, which features Applewood smoked bacon, honey-glazed ham, and pulled pork drizzled with BBQ sauce.

The creative work that accompanies the limited time offer has a backwoods tone marrying Mellow Mushroom’s well-established irreverence with an ingredient that has made its way into chocolate, mayonnaise and coffee.

“Bacon and Mellow Mushroom is a match made in heaven,” says Eddie Snyder, vice president executive creative director at Peter Mayer, the New Orleans based firm that produced the creative for Bootleg Bacon Fest. “We really had a ball creating fun and interesting pieces that will help the promotion live beyond the menu in the minds of the consumer.”

“Bacon is one of our most popular ingredients, and the addition of things like fresh eggs and produce and pulled pork really takes these menu items over the top,” says Mellow Mushroom Vice President of Brand Development Annica Kreider. “Our guests are already taking to social media to post about how much they love the new items.”

Piggybacking on the backcountry theme, the Bootleg Bacon Fest will be announced through a series of ‘60s style posters and menu designs. Mellow Mushroom customers will see one of five designs created for the limited time offer.

Bootleg Bacon Fest is available through November 15 at all Mellow Mushroom locations. Guests are encouraged to share their bacon experience on social media using the hashtag #mellowbacon. Cross-Utilization of Ingredients

The sales pressures that operators may have to face for months to come must be met with sharp cost-cutting measures. One of the proven ways to achieve cost reductions is through the cross-utilization of ingredients. This strategy eliminates waste of seldom-used items, creates opportunities to purchase fewer items in larger quantities and simplifies inventory management.

In addition, featuring the same ingredients in multiple recipes can create labor efficiencies and minimize training requirements as staff become familiar with individual recipe components. Familiar ingredients may also be comforting to consumers at this time, says Webster.

“Consumers will be looking for consistency in the face of a prolonged period of anxiety and uncertainty,” she says.

Operators could develop a simple menu of five or six items that maintain their integrity during takeout and delivery.

New Menu Items

As operators revamp their menus to optimize for what may be a prolonged period of consumer interest in takeout and delivery, they should probably not stray far from their core competencies, says Ray Camillo, CEO and funder of Blue Orbit Restaurant Consulting.

“I don’t think a pizza restaurant should start selling sushi for takeout,” he says.

However, there may be opportunities for operators to offer items that travel well that were not a part of their traditional dine-in menus, Camillo says. For example, a high-end steakhouse might be wary of sending an expensive, dry-aged rib-eye out in a cardboard box, but perhaps it could leverage the trust consumers have in its brand to create more mid-scale items that travel well.

“Maybe they could sell the most incredible lasagna or the most incredible cassoulet to go, for the whole family,” he says. “They could say, ‘You trust us with your steak, you can trust us with your lasagna, and it’s only $23 for a lasagna for six people.’”

Operators could develop a simple menu of five or six items that maintain their integrity during takeout and delivery, and reflect well on their brand. It could be posted on their website and social media as the temporary menu while the dining room is closed.

“I think consumers would support that and rally around it,” says Camillo.

Operators will need to address their legacy cost structures in multiple ways as they seek to revive their businesses during the pandemic and eventual recovery. Evaluating existing recipes and ingredients to eliminate those items that don’t contribute to both the top and bottom line is one of the strategies that can help.

  • 1 recipe Neapolitan Pizza Dough or 2 pounds store-bought pizza dough
  • 1 pound mushrooms (button, cremini, shiitake, portobello, or a mix), cleaned and trimmed
  • 6 tablespoons extra-virgin olive oil, divided
  • 1 medium shallot, minced (about 2 tablespoons)
  • 2 teaspoons freshly minced thyme leaves, plus 1 tablespoon picked whole thyme leaves
  • 1/4 cup cognac or other brandy or barrel-aged spirit, such as bourbon
  • 2 teaspoons soy sauce
  • Kosher salt and freshly ground black pepper
  • 6 cloves garlic, thinly sliced
  • 1 pound fresh mozzarella, torn into rough chunks and drained
  • Truffle oil (optional), for drizzling

Divide dough into 4 equal parts and place each in a covered quart-sized deli container or in a zipper-lock freezer bag. Allow to rest at room temperature for at least 2 hours before baking. Meanwhile, make mushroom mixture.

Place a large plate in the freezer. Place half the mushrooms in the bowl of a food processor and pulse until very finely chopped, about 10 short pulses, scraping down sides and redistributing mushrooms with a spatula as necessary. Transfer to a bowl. Thinly slice remaining mushrooms and set aside until assembling pizzas.

Heat 2 tablespoons olive oil in a 12-inch skillet over medium-high heat until shimmering. Add chopped mushrooms and cook, stirring occasionally, until mushrooms have exuded all their liquid and start to sizzle, about 8 minutes. Continue cooking until mushrooms begin to brown and leave browned bits stuck to bottom of pan, about 4 minutes longer. Add shallot and minced thyme and cook, stirring frequently, until softened, about 2 minutes.

Add cognac or brandy. Scrape bottom of skillet with a silicone spatula or wooden spoon to release browned bits. Continue to cook until brandy is nearly dry, about 4 minutes. Add soy sauce and stir to combine. Season to taste with salt and pepper and transfer mixture to the chilled plate. Spread into a thin, even layer and refrigerate until fully cooled, about 10 minutes.

Adjust oven rack to 6 inches under broiler and place stone or steel on rack. Preheat oven to highest possible temperature (500 or 550°F) for at least 45 minutes. Alternatively, use a KettlePizza and Baking Steel grill insert on an outdoor grill.

When ready to bake, turn one dough ball out onto a lightly floured surface. Gently press out dough into a rough 8-inch circle, leaving the outer 1 inch higher than the center. Gently stretch dough into a 10- to 12-inch circle, about 1/4 inch thick, by draping over knuckles and gently stretching. Transfer to floured wooden pizza peel.

Preheat broiler to high. Dollop 1/4 of mushroom mixture over the surface of the pizza, followed by 1/4 of mozzarella pieces. Scatter 1/4 of sliced mushrooms over pizza and scatter with 1/4 of whole thyme leaves and 1/4 of sliced garlic. Season with salt and drizzle with 1 tablespoon olive oil.

Transfer pizza to hot stone or steel and broil, rotating regularly for even cooking, until edges are puffed and lightly charred and bottom is crisp, 3 to 6 minutes total. Retrieve pizza with a metal peel and transfer to a cutting board. Allow to rest 1 minute. Meanwhile, switch oven back to 550°F to reheat stone for remaining pizzas.

Drizzle with truffle oil (if using) and serve immediately.

Repeat steps 6 through 9 with remaining pizzas.

The Best Vegan-Friendly Restaurants to Visit With Your Not-Yet-Vegan Family

Sure, you can finagle some kind of vegan creation just about anywhere, but our favorite eateries are the ones that require zero finagling. We love places where you can just plop down and point at the menu without saying a word and have something that doesn’t contain the remains of tormented, slaughtered animals set down in front of you 10 minutes later. (#TheDream) So, we made a list of chain restaurants that can deliver such an experience, or at least come close.

These are our 12 favorite vegan-friendly chain restaurants to hit up when we need to satisfy both the compassionate members of our clan and the ones who aren’t vegan—yet. 😉

1. Olive Garden

When you’re here … you can still be vegan! You got salad (with oil and vinegar instead of “Italian” dressing). You got bruschetta (just request it with no cheese). You got breadsticks (which have a garlic topping made with soy, not butter). You got minestrone soup, and you got all the pasta and marinara sauce you can fit down your gullet. Request some veggies to top it with and you got a party. 🎉

2. The Cheesecake Factory

There are plenty of vegan options scattered throughout the novel that is The Cheesecake Factory’s menu, including the Vegan Cobb Salad. And while there are no vegan cheesecake options offered (yet), you have to admit … it’s healthier this way. #ForTheBest

3. TGI Fridays

So there aren’t a ton of super-awesome vegan options at TGI Fridays, but it does have one that’s so good, we had to include it on this list. We’re talking about the Beyond Burger—available at all the chain’s locations nationwide. (There are over 465 of them.) All you have to do is order it without cheese and mayo and you’ll be biting into a bona fide vegan burger. TGIF!

4. Blaze Pizza

Blaze Pizza’s traditional, high-rise, and gluten-free crusts are all vegan, and the restaurant also offers vegan cheese and all the veggie toppings you can fit on a pizza. For sauce, try the classic red or the spicy red—and throw on some BBQ drizzle, balsamic glaze, or Buffalo sauce (all vegan).

5. Daily Grill

Daily Grill offers vegan starters such as a trio of hummus, sweet potato fries, and herbed brown rice with almonds. And for the main course, you can get the penne pasta primavera, the angel hair pasta pomodoro, or the grilled vegetable plate. You can also get a house salad with Asian ginger dressing or balsamic vinaigrette. Can I just say, yum?

6. Freebirds World Burrito

There are more than 70 locations across the U.S., so people all over the country can enjoy this chain’s yummy vegan burritos, bowls, and salads. The restaurant has also teamed up with Beyond Meat to offer Beyond Beef Crumbles in the Feisty flavor, which you can add to any Freebirds order. All the tortillas are vegan, and the only things you need to avoid if you don’t want to contribute to the suffering of animals are the queso, the ranch dressing, the BBQ sauce (which contains fish, for some reason), cheeses, sour cream, and (of course) meat.

7. Bareburger

Bareburger has a huge vegan menu, with six unique vegan burgers, Beyond Meat sausages, shakes, and more. Plus, you can customize your burger with delicious options—including the Beyond Burger a black bean, roasted corn, and poblano patty a quinoa, chia, and green pea patty and a sweet potato, kale, and wild rice patty—and with various toppings, such as vegan mayo, vegan cheese, and even a vegan egg. Bareburger even has a vegan kid’s menu!

8. Mellow Mushroom

Pizza chain Mellow Mushroom offers a vegan menu that includes tofu, tempeh, and Follow Your Heart cheese. Vegan sauces include red sauce, olive oil, sweet chili glaze, and jerk sauce. With the meat-free options, vegan cheeses, and all the veggie toppings you could ever want, this pizza joint definitely delivers. It also offers hoagies (the French and multigrain breads are vegan) and salads (the balsamic and herb vinaigrettes are vegan)—just make sure you swap out all the nonvegan meats, cheeses, and sauces for their superior vegan counterparts.

9. Yard House

No need to waste your time skimming over descriptions of dishes made from dead animals here—Yard House has a separate veg menu featuring Gardein vegan meat products and a vegan cheeseburger with Daiya mozzarella on a made-in-house patty. It also offers tons of other vegan entrées, many animal-free sides, and even a vegan dessert option! Best of all, it has locations nationwide, so there’s probably one near you.

10. P.F. Chang’s

In addition to P.F. Chang’s already long list of vegan options, such as the Harvest Thai Curry, Coconut Curry Vegetables, and Ma Po Tofu, everything on its menu can be made with tofu instead of meat. The many options for vegan appetizers and entrées will leave you spoiled for choice and wanting for nothing!

11. Pieology Pizzeria

Pieology’s new “Plant-Based Protein” toppings line featuring Spicy Italian Sausage Rounds, Beef Meatballs, and Diced Chicken vegan meats makes it, like, too easy for vegans to experience pizza at its fullest potential. The award-winning vegan-friendly menu also includes dairy-free cheese and a vegan crust option (the gluten-free crust) at no extra cost, leading us to believe that if creating delicious pizza were a science, Pieology would be Einstein.

12. Buca di Beppo

At first glance, it wouldn’t seem like vegans have much business being here, but there’s actually quite a bit to choose from. For an appetizer, try the bruschetta—just hold the cheese. And here’s an insider’s tip: For the main course, order the pasta puttanesca (penne pasta with tomatoes, onions, green peppers, black Kalamata olives, green olives, and capers)—which must be specially requested because it’s not on the menu—or create your own pasta using either the marinara sauce or the garlic olive oil. Add veggie toppings as well as crushed pepper and/or poached garlic. You can also get a mixed green salad—just substitute oil and vinegar for the Italian dressing. Other vegan sides include the steamed green beans and the broccoli. Not too shabby. 👌

You don’t have to live in a big city to get a great vegan meal. You might not have all these restaurants within a 7-mile radius, but at least a couple of them are probably nearby. Either way, vegan pizza, burritos, burgers, and other delish dishes are usually just around the corner for you and your family to enjoy!

These spots are great for vegans, and going to these places with your nonvegan friends and family members is also a fantastic way to show them how easy it is to find delicious animal-free meals in mainstream places. You’ll likely have to tell them to keep their mitts off your grub, because it’ll look so delicious and probably be much more colorful than theirs.
