Ingredients

  • 12 ounces elbow macaroni or other small, shaped pasta
  • 7/8 teaspoons salt
  • 2 cups skim milk
  • 1/4 cup all-purpose flour
  • 3/4 teaspoons onion powder
  • 1 cup low-fat shredded sharp Cheddar cheese
  • 1/8 teaspoon hot pepper sauce, or more to taste

Directions

Bring a pot of water to boil over high heat. Add 1/8 teaspoon of the salt. Cook the pasta according to the pasta directions, drain, and return to the pot.

Meanwhile, in a large saucepan, whisk together the milk, flour, remaining salt, and onion powder until blended. Bring to a boil over medium-high heat, whisking frequently. Reduce heat to low and simmer, stirring often, until thickened, about 2 minutes. Remove the pan from heat and whisk in the cheese and hot sauce. Add the sauce to the pasta; toss to mix and coat.

We haven’t even added in swimming lessons and whatever else Landon decides he’s up for trying this year but with work travel looming, as well as, the insanely packed fourth quarter…..the pressure is on.

And by pressure….I mean getting homemade meals on the table that are quick, easy and only leave me with one pot to clean like this super simple Cheeseburger Macaroni recipe that’s been on repeat for like 3 years now. And now….this Super Easy Homemade Mac and Cheese recipe that’s on the table as fast as the Blue Box Mac and Cheese. Seriously.

And since it’s made with whole ingredients like REAL CHEDDAR CHEESE….you can actually feel good about feeding your family the BEST Macaroni and Cheese recipe in as little time as possible. Nothing from a box, no powdered cheese….just a creamy, cheesy sauce that’s completely addicting.

Crisp on top, oozing with sauce and with perfectly cooked pasta, my Super Simple Macaroni Cheese is totally delicious, ready in just 20 minute and so simple to make – perfect for those busy days when you just want something easy!

Macaroni cheese is one of my all-time favourites – serious comfort food. We have it pretty much on a weekly basis, and I’ve spent a good many years perfecting it. I always used to get super frustrated because the cheese sauce would soak into the macaroni, meaning it was too dry and the pasta was overcooked. But after the best part of twenty years fiddling with it (it’s one of my oldest recipes) I think I finally have it nailed.

For me the key is getting the cheese sauce just right – not too thick, then making sure you under cook the macaroni so it doesn’t get overcooked when you put it in the oven and finally, putting it all in a really hot oven for just a short amount of time to crisp up the top without overcooking the macaroni or the sauce.

I like to serve this with a simple side salad dressed with my favourite Honey Mustard Dressing. My kids like to eat this with baked beans!

My favourite wine match for macaroni cheese is a crisp unoaked Chardonnay, but if you prefer red, a soft, fruity Merlot from Chile or France would work well here too.

Easy Baked Macaroni and Cheese Recipe

I’ve always been a macaroni and cheese connoisseur so when i’m able to make my own with a recipe like this, it makes the world a better place.

So what makes a good macaroni and cheese?

Well, in my opinion, there’s three things…

First and foremost is that commercial powder mixes or cheese “soups” or spreads just don’t do the dish justice.

All they do is imitate cheese flavor and texture and don’t do the job right at all.

The best way to get a rich, creamy, delicious cheese sauce?

Simple, use real cheese! And that’s exactly what you’ll do with this recipe.

Another thing that makes a good macaroni and cheese is how the pasta takes on the cheese sauce.

If it’s simply cooked noodles swimming in some cheesy sauce, that’s not really what i’m looking for.

I want to pasta to completely be ensconced in cheese and to absorb all the cheese goodness, texture and flavor. By baking it in the oven, that is exactly what you’ll do.

And the 3rd thing that I think makes a delicious macaroni and cheese is having a wonderful layer of golden brown melted cheese on top.

It’s heavenly and adds a dimension that simply cannot be found in a box.

Many recipes call for several steps and ingredients but this one uses just the basics and is really the easiest and best recipe for baked macaroni and cheese I’ve ever made.


How To Make Macaroni and Cheese

I&rsquom not kidding when I say that this homemade macaroni and cheese is as quick to make as the boxed noodles!

Noodle Prep &ndash Boiling the macaroni is the part that takes the longest. Start by preparing the noodles according to the directions on the package.

Roux &ndash While the noodles are cooking, start prepping the creamy sauce. First, melt the butter in a skillet over medium heat. Once melted, use a whisk to stir in the flour until it has a paste-like consistency. Let it cook for about 3 minutes, or until it turns golden brown.

Sauce &ndash Next, slowly pour in the milk while whisking everything so no lumps form. Once everything is mixed in, let it cook for a few minutes until it thickens. Stir it occasionally to keep it from burning.

Make It Cheesy &ndash Once the sauce has thickened, it&rsquos time to add the cheese. Stir in 2 cups of cheddar cheese, along with the salt & pepper until everything has completely mixed together.

Compile & Serve &ndash Add the cooked noodles to the skillet and give it a good stir until fully combined. Sprinkle the remaining 1/4 cup of cheese over the top and then serve.


Preheat oven to 350 degrees F.

Make a roux by melting butter, add flour and stir, then cook over low heat for 2 to 3 minutes while stirring constantly. Set aside to cool.

Cook macaroni according to package directions. Drain and put into a disposable foil pan.

While macaroni is cooking, heat 8 cups of the milk, add the Colby and Cheddar cheeses and cook over medium heat while stirring to melt cheese.

Add the salt and white pepper to the cheese mixture. Add the roux and stir until well thickened. Add this cheese sauce to the cooked macaroni and mix well to coat macaroni. Pour in the remaining 2 cups milk.

Combine the bread or cracker crumbs with the melted butter and sprinkle over the top of the macaroni. You may prepare it this far, refrigerate, and bake it later.

Bake at 350 degrees F for about 30-45 minutes or until bubbly in the middle.


Preheat the oven to 350 degrees F.

Cook the macaroni until al dente as directed on package. Drain and evenly distribute amount long, shallow pans (hotel or catering pans are usually 12x20x4 and for the 100-serving size recipe you'll need 3 pans).

In a large saucepan or Dutch oven, melt the margarine. Stir in the flour until smooth. Add the salt and pepper and slowly add the milk, stirring constantly, until smooth.

Stir in the Velveeta cheese and continue stirring until the cheese is melted and the mixture is smooth and creamy.

Pour the cheese sauce over the macaroni in the pans to evenly coat. Sprinkle the shredded cheddar over the top of the macaroni (8 ounces per pan).

Bake the macaroni at 350 degrees F for one hour or until bubbly in the middle.


Easy Creamy Macaroni and Cheese

This Easy Creamy Macaroni and Cheese is the best homemade mac and cheese recipe there is. Made with Velveeta and super kid-friendly.

Ingredients

  • 3 Tablespoons Butter
  • ½ Onion, Diced
  • 3 Tablespoons Flour
  • 2-½ cups Milk
  • 2 cups Velveeta, Cubed
  • Salt And Pepper, to taste
  • 12 ounces, weight Small Shell Pasta, Cooked Al Dente

Preparation

In a large pot over medium heat, melt butter and saute diced onion until softened. Add flour and stir continuously for 1–2 minutes. Make sure not to burn the flour.

Whisk in milk and stir until all of the clumps of flour have dissolved. Bring sauce to a simmer and stir until it thickens, about 5 minutes.

When sauce is thick enough to coat the back of a spoon, turn burner to low and add Velveeta cheese. Stir until all the cheese is melted.

Season cheese sauce with salt and pepper to taste and stir in the cooked pasta. The sauce will thicken slightly more as it sits.

Notes:
• You can add frozen broccoli to the boiling water for the last 2–3 minutes of the pasta cooking time.
• Use any type of small pasta shape.
• Add 1 teaspoon hot sauce to the cheese mixture for an added kick.
